Veggie Omelet
Ingredients (1 serving):
- 2 large eggs (100g)
- 30g spinach (1 cup, fresh)
- 40g tomatoes (½ medium)
- 30g bell pepper (¼ medium)
- 20ml milk (1.5 tbsp, optional)
- 5g olive oil (1 tsp)
- Salt and pepper to taste
Preparation:
- Whisk eggs with milk, salt, and pepper.
- Heat oil in a non-stick pan. Sauté spinach, tomatoes, and bell pepper for 2–3 min.
- Pour egg mixture over veggies. Cook on low until set, then fold and serve.
