Vegetable Pasta
Ingredients (1 serving):
- 70g whole wheat pasta (dry)
- 60g zucchini (diced)
- 60g bell pepper (diced)
- 40g cherry tomatoes (halved)
- 20g spinach (fresh)
- 10g parmesan cheese (grated, optional)
- 5ml olive oil (1 tsp)
- Salt, pepper, basil or Italian herbs to taste
Preparation:
- Cook pasta according to package instructions. Drain.
- Heat oil in a pan, add zucchini, bell pepper, and tomatoes. Sauté 3–4 min.
- Add spinach and cook until wilted (1 min). Add pasta, salt, pepper, and herbs. Toss to combine. Top with parmesan.
