Vegetable Curry
Ingredients (2 servings):
- 200g mixed vegetables (cauliflower, carrots, peas, bell pepper)
- 100g potatoes (diced)
- 100ml coconut milk (1/2 cup)
- 100g diced tomatoes (fresh or canned)
- 10g curry paste (2 tsp)
- 5ml olive oil (1 tsp)
- Salt, pepper, herbs to taste
Preparation:
- Heat oil in a pan. Add potatoes and cook 3 min. Add other vegetables and sauté 3–4 min.
- Add curry paste, tomatoes, and coconut milk. Simmer 10–15 min until veggies are tender. Season to taste.
