Tofu Curry
Ingredients (1 serving):
- 100g firm tofu (cubed)
- 60g bell pepper (diced)
- 60g zucchini (diced)
- 40g onion (diced)
- 100ml coconut milk (1/2 cup)
- 10g curry paste (2 tsp)
- 5ml olive oil (1 tsp)
- Salt, pepper, herbs to taste
Preparation:
- Heat oil in a pan. Sauté onion, bell pepper, and zucchini 2–3 min.
- Add tofu, curry paste, and coconut milk. Simmer 5–7 min until thickened. Season to taste.
