Shrimp Quinoa
Ingredients (1 serving):
- 80g cooked quinoa (1/2 cup)
- 70g cooked shrimp (peeled)
- 40g bell pepper (diced)
- 20g spinach (1 cup)
- 10ml olive oil (2 tsp)
- 5ml lemon juice (1 tsp)
- Salt, pepper, herbs to taste
Preparation:
- Heat oil in a pan. Sauté bell pepper 2 min, add shrimp and spinach, cook 2 min more.
- Add quinoa, lemon juice, salt, pepper, and herbs. Toss to combine and heat through.
