Lentil Soup
Ingredients (2 servings):
- 100g dried lentils (1/2 cup)
- 60g carrot (1/2 medium, diced)
- 60g celery (1 stalk, diced)
- 60g onion (1/2 medium, diced)
- 1 garlic clove (minced)
- 500ml vegetable broth (2 cups)
- 10ml olive oil (2 tsp)
- Salt, pepper, herbs to taste
Preparation:
- Heat oil in a pot. Sauté onion, carrot, celery, and garlic 3–4 min.
- Add lentils and broth. Bring to a boil, reduce heat, and simmer 25–30 min until lentils are soft.
- Season with salt, pepper, and herbs. Serve hot.
