Egg Fried Rice
Ingredients (1 serving):
- 100g cooked brown rice (2/3 cup)
- 2 large eggs (100g)
- 40g peas and carrots (1/3 cup, diced)
- 10ml soy sauce (2 tsp)
- 5g green onion (sliced, optional)
- 5ml sesame oil (1 tsp)
- Salt and pepper to taste
Preparation:
- Heat sesame oil in a pan. Add peas and carrots, sauté 2 min.
- Push veggies to the side, scramble eggs in the pan.
- Add rice, soy sauce, salt, and pepper. Stir-fry 2–3 min. Top with green onion.
