Ingredients (1 serving):
- 100g cooked chickpeas (1/2 cup)
- 40g cucumber (1/4 medium, diced)
- 40g tomato (1/4 medium, diced)
- 10g red onion (thinly sliced, optional)
- 5ml lemon juice (1 tsp)
- 5ml olive oil (1 tsp)
- Fresh herbs (parsley, dill) to taste
- Salt and pepper to taste
Preparation:
- Combine chickpeas, cucumber, tomato, and onion in a bowl.
- Add lemon juice, olive oil, herbs, salt, and pepper. Toss well and serve.
