Breakfast Muffins
Ingredients (6 muffins):
- 120g whole wheat flour (1 cup)
- 60g rolled oats (2/3 cup)
- 2 ripe bananas (200g, mashed)
- 60g honey or maple syrup (3 tbsp)
- 60ml milk (1/4 cup)
- 1 large egg (50g)
- 30g walnuts or pecans (1/4 cup, chopped, optional)
- 5g baking powder (1 tsp)
- Pinch of salt
Preparation:
- Preheat oven to 180°C (350°F). Line a muffin tin with paper liners.
- In a bowl, mix flour, oats, baking powder, and salt.
- In another bowl, whisk egg, mashed bananas, honey, and milk. Combine with dry ingredients. Fold in nuts.
- Divide batter among muffin cups. Bake 20–25 min until golden and a toothpick comes out clean.
