Breakfast Burrito
Ingredients (1 serving):
- 1 whole wheat tortilla (50g)
- 2 large eggs (100g)
- 40g black beans (1/4 cup, cooked)
- 30g bell pepper (1/4 medium, diced)
- 30g tomato (1/4 medium, diced)
- 20g shredded cheese (2 tbsp, optional)
- 5g olive oil (1 tsp)
- Salt, pepper, and spices to taste
Preparation:
- Heat oil in a pan. Sauté bell pepper and tomato for 2 min.
- Add eggs, salt, and pepper. Scramble until just set. Stir in beans and cheese.
- Warm tortilla, fill with egg mixture, roll up, and serve.
