Beef Stew
Ingredients (2 servings):
- 200g beef (lean, cubed)
- 100g potatoes (diced)
- 60g carrots (sliced)
- 60g onion (diced)
- 40g peas (fresh or frozen)
- 1 garlic clove (minced)
- 400ml beef broth (1 2/3 cups)
- 10ml olive oil (2 tsp)
- Salt, pepper, herbs to taste
Preparation:
- Heat oil in a pot. Brown beef on all sides. Remove and set aside.
- Sauté onion, carrot, and garlic 2–3 min. Add potatoes, peas, and beef back to the pot.
- Add broth, bring to a boil, reduce heat, cover, and simmer 40–50 min until beef is tender. Season and serve.
